Garlicky Fried Fish

1 Package Galloping Garlic Dip Mix
3/4 C. Flour
1 C. Buttermilk*
4 Fish Fillets (approx. 1.5 pounds)

Oil of choice for frying
Mix dry dip mix with flour in a shallow bowl and set aside.

In another shallow bowl, pour in the buttermilk and soak the fish for one hour in the refrigerator.
Prepare pan by adding 1/4-1/2 inch of oil to pan.
Just before the next step, heat the oil on medium to medium-high.
Lift one fillet at a time and drain buttermilk off for a few seconds. Dredge in flour mixture, then place in the pan.
Fry just until lightly golden brown. Drain on paper towels.
This dish is great served with green beans and rice.

* If you don’t have buttermilk, you can pour 1 T. of white vinegar in a 1 cup measuring cup and add enough milk to equal one cup.
